Going bananas!

I woke up today with high expectations.   You see, I'm what some might call a last minute type of gal.  I have a lot to do with not nearly enough time to squeeze it all into a 24 hour period.  Who else has this problem??  I mentally see you out there raising your hands.

I decided to be the best mommy I could be and make a special breakfast for my not so little people.  I am mommy to a 10 year old boy and an 8 year old girl.  Usually pleasant, sometimes challenging.

When my son was three, he was diagnosed with autism.  Being a young, practically single mom, I was lost, confused.  I honestly had no idea what autism was or where to seek help.   Slowly, as I grew up personally and as a mommy to this amazing little boy, I learned to start researching and using the few resources I could find.

I decided to put him on a gluten free, casein free diet.  From what I've read, some of these kiddos have a bad gut and although they may not show signs of allergies, their bodies can't digest these foods the same way you and I can.  The yeast stays in their gut sometimes causing that bloated belly and is said to overwhelm their system and block their brain from important nutrients.  I'm still learning so if you know more, please share.

Now I will be honest.  My son is 80/20.  I'm no where near perfect and I haven't gotten everyone to jump on the gfcf train.  So there are times he gets slipped a cookie or some bread.  But when I have time, to help with his cravings, I attempt to cook.

So, this morning, even with my hectic start, I'm sharing my recipe for gluten, dairy, and sugar free banana waffles.  This batter makes about 12 waffles.  I freeze the rest to pop in the toaster those days my head is about explode from the over excitement of what my day brings... but that's a new story!  These are perfectly sweet for my picky eaters.  I usually top w extra bananas and a dollop of homemade coconut yogurt for extra umph!

Gluten free banana waffles

Yields 10-12 waffles depending grill size

1 3/4 cup gluten free flour (my recipe follows )
2 tea gluten free baking flour 
1 tea salt
2 tea pumpkin pie spice mix ( or a combo of cinnamon and nutmeg, whatever you have )
1 tea xanthan gum
1 cup milk ( I make my own almond milk, but whatever you use will work )
2 eggs 
1/4 cup oil ( I use coconut, it adds great flavor )
2 tbl agave nectar
2 very ripe bananas smashed

Why I love this mix!  I mix the dry first, and dump everything else in and blend.  Easy peasy! Batter will be thick but like a pancake mix would normally look like.  Don't forget to oil your waffle iron.  Make according to you iron's directions. 

Gluten free flour blend 

1 cup brown rice flour
1 cup white rice flour 
1 cup white sweet sorghum flour
1 cup tapioca starch

mix thoroughly and store in air tight container.
